Swedish Meatballs

We had a pot luck at work and someone requested Swedish meatballs. I agreed to make them, even though I had never made them before! So I had to do a little research.

Yes, I visited Ikea.

I saw an article that said that they had gotten chicken meatballs, but alas, when I got there, they had discontinued them sometime in the seven months since that article was written. Oh well. I bit the bullet and took a chance that my digestive system could take a few small bites (I have an intolerance to certain proteins found in pork, beef, and the dark meat of poultry, so I avoid those meats altogether - because it does not contribute to me living my best possible life, if you know what I mean).

I survived and was able to come up with a recipe that I think, although maybe not authentic Swedish meatballs, is pretty close and really tasty!

Swedish Meatballs

meatballs:
  • 3 TBS butter or olive oil
  • 1/2 sweet onion, minced
  • 1/4 tsp nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp black pepper
  • 1/2 tsp salt, or garlic salt or adobo
  • 1/4 tsp tarragon *
  • 1-2 cups bread/cracker crumbs
  • 2 eggs
  • 1 lb ground meat
gravy:
  • 3TBS butter or olive oil
  • 1 cup mushrooms, chopped into small pieces *
  • 1/4-1/2 cup flour
  • 1 cup chicken broth
  • 1/4 cup sour cream *
  • 1 TBS Worcestershire sauce *
*optional ingredients:

Preheat oven to 300F for non-browned meatballs or 350F for browned meatballs.

Heat the butter/oil for the meatballs in a large sauce pan. Add the onions, saute for 1 minute. Add the seasonings for the meatballs. Saute for 1 minute. Scrape out into a large mixing bowl. (Don't clean the pan, you'll use it for making the sauce later and the drippings add to the flavor.)

Mix in the bread/cracker crumbs, then the eggs. Add the meat and mix everything until uniform.

Oil a cookie sheet. Roll the meat mixture into 1" balls and place on cookie sheet about 1/2 apart. The mixture is much easier to form into balls if it is chilled first.

Bake for about 15-20 minutes.

Heat the sauce butter/oil in the same pan you sauted the onions. Add the mushrooms and saute for a few minutes. Add flour and mix until incorporated. Mix together broth, sour cream, and Worcestershire. Whisk into pan. Simmer on low until thickened to desired consistency.

Serve meatballs and gravy over cooked egg noodles or mashed potatoes.

Nacho Bake

I had some stale tortilla chips to use up, so I just whipped up a nacho bake! It was so good that my son joked that he is eagerly awaiting for more tortilla chips to go stale. You don't have to wait for stale chips to enjoy this easy bake dinner.
  • 1 lb ground meat (vegetarian option below*)
  • 1 can Fire Roasted Rotel
  • 1/8 cup water
  • taco seasoning (whichever one you like)
  • 1 can black beans
  • 1 TBS olive oil
  •  4-6 cups tortilla chips (these can be somewhat stale, it'll taste the same)
  • 3-4 cups shredded Mexican mix cheese (I used one with Monterey jack, medium cheddar, queso quesadilla, and asadero)
  • 1/8 - 1/4 cup Mezzetta Hot Cherry Peppers, chopped into small pieces
  • 1/8 cup liquid from the jar of peppers
Heat a skillet over medium heat. Add the ground turkey, water, the whole can of Rotel (liquids and all), liquids from the can of beans, and the  taco seasoning. Cook until browned. This should be a little saucy, so add additional water if necessary as it cooks.

Spread the olive oil in the bottom of a 7x11 (2 quart) baking dish. Fill the dish about half way with tortilla chips. Sprikle cheese over the chips just enough to lightly cover them. Spread the meat mixture over the cheese. Spread the beans and peppers over the meat. Sprinkle more cheese over the top (I use enough to completely cover all other ingredients). Pour the pepper liquid over the top.

Bake at 300F for about 20 mins. It's ok if the cheese browns or doesn't brown; it is good both ways.

Serve as is; or with sour cream, taco sauce, avocados/guacamole, or more chips!
*This can be easily turned into a vegetarian dish by using 2 cans of black beans, mashed, in place of the ground meat, and omit the layer of whole beans.

Tunisian Brik

I wanted to add some more appetizers to my repertoire, so when I found a recipe for Tunisian Brik in my appetizer cookbook ("Appetizers, Finger Food, Buffet & Parties", by Bridget Jones) I had to try making it. I did make a few small changes - of course. The following is what I came up with.
  • 3 TBS butter, melted
  • 1 small red onion, finely chopped
  • 1 lb ground turkey
  • 1 garlic clove, minced
  • 1 TBS lemon juice
  • 2 TBS finely chopped cilantro
  • 1-2 eggs, scrambled
  • phyllo dough
Start by mixing everything but the egg and phyllo dough in a frying pan and cook until meat is thoroughly cooked. Then it is on to phyllo dough!

Let me start by saying that phyllo dough is a mother to work with! It is very thin, tears easily, dries out quickly, and then crumbles. I kept a mister handy to keep the dough moist; but be careful! If you get the dough too moist, it sticks to everything!

I laid out two sheets. the recipe called for brushing with melted butter, but due to the delicacy of these sheets, I sprayed them with Pam instead.
The sheets were rather large, so I cut them into sixths.
Then I folded each of the pieces until they made 3"x3" squares.

They don't need to be perfectly even. As you can see, some parts have more layers than others.
Place a tablespoon of the meat filling in the center of each square and a teaspoon of egg over that.

Fold the phyllo corner to corner and seal with a little water. Place the triangles on a greased/oiled baking sheet and drizzle with olive oil.
Bake at 425F for 8-10 minutes. They should be golden brown.

These were AWESOME! And once you get the hang of handling the phyllo dough, they are amazingly easy to make!

Turkey Meatballs with Wine Sauce

I had a work party to go to and needed a dish to bring. I wanted something that could be a meal dish or h'orderves. Meatballs would sure fit that bill. I have my very own recipe for meatballs that I just LOVE!

Turkey Meatballs

2lbs ground turkey
1 sleeve of saltines
3 TBS rosemary
1 TBS Italian seasoning
1 TBS thyme
2-3 eggs
1-3 small cloves garlic minced
1/2 sweet onion minced
a couple of dashes olive oil
Salt and pepper

I do not eat mammals, but poultry is fair game! I thawed out 2lbs of ground turkey. Nothing like meat in a tube!
Pre-heat the oven to 350°. Mix all the ingredients together and roll into balls. I chose to roll them into small balls that could be picked up with toothpicks, but you could make them as big as you like. place them on a cookie sheet. They can be very close to each other. Bake until they are completely cooked.

These are DELICIOUS!
And they go really well with spaghetti and sauce.

Speaking of sauce, my husband thought a sauce might be nice with these, so I made one up for them.

Wine Sauce

1/2 bottle Madeira wine
4oz rice vinegar
1/4 cup apple cider vinegar
1-2 tsp soy sauce
2 TBS stone ground Dijon
1 TBS cornstarch dissolved in water

Put the first 4 ingredients in a saucepan on medium heat. Simmer until the liquids start to concentrate. Add the Dijon and the dissolved cornstarch. Stir over heat until thickened.

Serve with the meatballs, or any other meat that might go well with a wine sauce. It is fantastic!

These were a big hit at the party. People were asking about the meatballs and the sauce. I rock!

Turkey Meatballs

These meatballs I made on the spur of the moment. We needed something to eat and I was sick of boxed meals.

1 lb ground turkey
2 tsp dried rosemary
1/3 sweet onion, minced
2 cloves garlic
1 egg
1 sleeve saltines, crushed
1 TBS oregano
1 TBS basil
salt & pepper
2 TBS olive oil

In a bowl I mixed the ground turkey, egg, saltines - crushed, onion, garlic, rosemary, oregano, basil, salt and pepper, and olive oil.

Form the mix into bite-sized balls and place them on a cookie sheet.

Bake in a pre-heated oven at 350F for about 20-30 mins.

These came out slightly crispy on the outside which was fantastic. I served them with spaghetti pasta and marinara sauce. The meatballs were YUMMMY! I will definitely make these again, but I would serve them with a sweeter sauce next time.

Lasagna Bake

I had a bunch of ingredients that needed to be used up: mozzarella, cottage cheese, sweet onion, and unflavored yogurt. Hmmm... what could I make?

Lasagna bake!!!

What's that? What about the yogurt? Trust me.

First, turn the oven on to 350F and grease a lasagna pan well with olive oil.
  • 1 lb mini lasagna noodles
  • 1/2 lb shredded mozzarella
  • 1/2 lb cottage cheese
  • 1/3 lb plain yogurt
  • 1 lb ground turkey
  • 1/2 sweet onion
  • 1 jar/can favorite spaghetti sauce
  • 1 TBS garlic salt
  • 2 cup shredded mozzarella for topping
  • Parmesan
Par-cook the noodles and mix with the mozzarella, cottage cheese, and yogurt.

Then mix in the spaghetti sauce and ground turkey sauteed with sweet onions, garlic salt, and top with shredded mozzarella and parmesan.

Bake for about an hour at 350F.

How was it?
DEEE-LICIOUS!!
